Bread Bowl with Cheese Spinach Dip (added 18-Dec-2003)

1 Shepherds bread loaf or round sourdough loaf, whole (not sliced)
½ stick of margarine (plus a little more for spreading)
1 lb. package Velveeta cheese, cubed
1 pkg (10 oz.) frozen chopped spinach, defrosted
½ tsp. caraway seeds
Cut a top off the loaf of bread. Pick out hunks/cubes of the bread and set aside making a
"bowl" out of the bread loaf. You can cut up additional bread into hunks or cubes if you are serving a large crowd.
Spread the inside of the bread bowl with margarine and toast in 350 degree oven along with the hunks of bread pieces you pulled out of the middle of the loaf.
In a saucepan, melt ½ stick of margarine. Add Velveeta cheese cubes to melted margarine. Stir the mixture constantly to melt the cheese taking care to keep the heat low
so the cheese doesn't burn.
Drain or squeeze defrosted spinach through a colander to get as much of the liquid out as possible. Add the drained spinach to cheese mixture and stir. Add caraway seeds.
Remove the toasted bowl from the oven. Pour in the cheese mixture. To serve, place pieces of bread around the breadbowl on a tray and dip the pieces into the cheese mixture.
