Cherry Squares (added 18-Dec-2003)

1½ C sugar
1 cup butter (not margarine)
4 eggs beaten
2 Tbsp. vanilla or lemon extract
2 C flour
1 can pie filling (cherry or blueberry)
Powdered sugar
Cream together the sugar and butter. Mix the beaten eggs and the vanilla or lemon extract and add to the creamed mixture. Add the flour and mix well.
Spread the batter into an ungreased 9" x 13" pan. With a spatula, make indentations to section off squares esulting in 3 rows of 5 squares each.
Spoon pie filling, by tablespoons, into the middle of each square, lightly pressing. Do not press very deep.
Bake at 325° F for 35-40 minutes or until toothpick comes out clean and cake is golden. Take out and let cool in pan. When cool, sift powdered sugar over top and cut into squares.
